Simple recipes that are low in fat and calories and easy to prepare can help you stay on track whether you are trying to shed a few pounds or if you are simply concentrating on eating healthy. Try some of my favorites below.
Apricot Chicken
6 ounces of boneless, skinless chicken breast
1/4 cup flour
2 tsp canola oil
1/2-3/4 cup of apricot preserves
1/2 cup of fat free, reduced sodium chicken broth
1 tbsp reduced sodium soy sauce
Lightly cover chicken breasts with flour on both sides;
Heat oil in a large skillet and brown chicken for 3-4 minutes on each side, lower heat to low;
Combine apricot preserves, chicken broth and soy sauce in a bowl and add to chicken in skillet;
Simmer for 15 minutes or until chicken is thoroughly cooked, then remove chicken from skillet and put on a plate, cover with tin foil;
Turn heat to medium/high and cook the sauce until it thickens (about 2 minutes);
Pour sauce over chicken and serve;
You can also garnish with a tablespoon of crushed pinapple or mandarin orange segments.

Ginger Lime Chicken Breasts
4-5 Boneless, skinless chicken breasts
2 limes (squeezed for juice)
2 tsp low sodium soy sauce
1 tsp fresh grated ginger
1 tsp sesame oil
1 garlic clove (minced)
1 bunch scallions (finely chopped)
Put chicken in a shallow glass baking dish;
In a separate bowl combine garlic, oil, scallions, lime juice, ginger, soy sauce. Coat chicken and refridgerate for 3 hours;
Grill chicken on medium heat or broil for 7 minutes on each side until chicken reaches 165 degrees and is cooked through.
You can garnish with sliced limes!

HOW ABOUT DESSERT!
Strawberry-Meringue Pie
Canola oil cooking spray
1 cup graham cracker crumbs
4 cups sliced strawberries
1 cup plus 2 tbsp sugar
1/4 tsp salt
1 envelope unflavored gelatin
1 1/2 tsp vanilla extract
1/2 cup pasteurized egg whites
1/4 tsp cream of tartar
Heat oven to 375 . Coat a 9" pie plate with cooking spray; pour in crumbs; press to form an even layer. Bake 15 minutes. Mash 2 cups berries with 1 cup sugar and salt in a medium pan over medium heat. Bring to a boil; stir. Add gelatin; stir until dissolved. Remove from heat; add 1 tsp vanilla and remaining 2 cups berries. Mix egg whites and cream of tartar in a bowl; beat until soft peaks form. Add remaining 2 tbsp sugar and remaining 1/2 tsp vanilla; beat until stiff. Spoon berries onto piecrust; top with meringue. Bake 12 minutes. Cool; refrigerate at least 3 hours.
